From a very young age, Elizabeth has lived her life with purpose. As Miss Iowa Teen, Elizabeth created "Think- Don't Drive and Drink Campaigns" with Governor Terry Branstad. She has also handmade and donated thousand of chocolate chip cookies to kids and adults, such as the late Robin Williams, in connection with children's literacy initiatives around the country including 826 Valencia.
As Mrs Maine 2006 and Mrs Maine 2011, Elizabeth dedicated much of her time to children's literacy, stroke awareness and food allergy awareness. Elizabeth represented Maine in the Mrs International Pageant live in Chicago in July 2011. Elizabeth's platform was Let MedicAlert Speak for You with MedicAlert Foundation. Elizabeth was awarded the Go Red for Women award at the national pageant.
Elizabeth lives her daily life with allergies to peanuts, tree nuts, fish, and shellfish. In 1998, she nearly lost her life due to an allergic reaction to almonds. In 1999, she had a second near-fatal allergic reaction while pregnant with her third son and was hospitalized for more than a week in Minnesota. With Brian Hom, she co-founded the Food Allergy Zone to find a cure and the cause of food allergies and is a spokesperson for FAACT - Food Allergy & Anaphylaxis Connection Team.
In 2006, Elizabeth became a food allergy spokesperson for MedicAlert Foundation and appeared on their magazine, which was mailed to over one million members. Elizabeth continues in that role today, working closely with their executive team, appearing on their website and raising food allergy awareness internationally and also appears with Jerome Bettis in the book, One of the Gang – Nurturing the Souls of Children with Food Allergies by Gina Clowes.
Elizabeth graduated with honors a year early from high school and college. Elizabeth attended the University of Iowa and is an honors graduate of St. Ambrose University in Davenport, Iowa. She has several certificates in Business Leadership and Project Management from St. Thomas University in Minneapolis, MN and is also a Certified Professional Life Coach and certified Food Over Medicine instructor.
