Elizabeth's life and work have been profoundly shaped by personal experiences. After developing severe food allergies as an adult, she survived multiple episodes of anaphylaxis and was resuscitated twice, including once while six months pregnant with her son Cameron. These experiences inspired her advocacy for food allergy awareness, safety, and inclusion and led to the creation of Food Allergy Zone.
For more than a decade, Elizabeth has served as a spokesperson and advocate for the Food Allergy & Anaphylaxis Connection Team (FAACT) and MedicAlert®. She is co-author of the bestselling children's books A Lesson For Every Child: Learning About Food Allergies, Dream Big with Food Allergies, and Max's Big Adventure. She was also featured in the book One of The Gang alongside football legend Jerome Bettis.
Known affectionately as the "Chief Cookie Baker," Elizabeth and her family have baked and donated thousands of nut-free chocolate chip cookies to schools, charities, organizations, and families across the United States. What began as a response to a life-changing food allergy experience has become a symbol of kindness, inclusion, gratitude, and service. Her award-winning chocolate chip cookies even earned first place at the Cumberland County Fair in Maine.
Elizabeth and her husband, Peter, have been married for nearly three decades and are the proud parents of four adult sons. They divide their time between Maine and South Carolina and share their home with beloved rescue pets. Together, they are committed to helping others through philanthropy, advocacy, volunteerism, and acts of everyday kindness.
At the heart of Elizabeth's work is a simple belief: We are not entitled to time.
